Gin & Tonic Cake


My favorite Gin

I know it’s Silly, but I have had a bottle of Gin in my Freezer for at least 5 years as I rarely drink hard alcohol anymore, but I do cook with it.  Dilemma:  What to cook with Gin, as it is not the common kitchen staple that other forms of Alcohol would be.  Limes are in season, my favorite store had them on sale for 10 cents each the other day, and therefore it was a good time to be inventive. I like limes and I used to love Gin and Tonic, so there you are.   If you don’t like Gin you may or may not enjoy this cake.  I, however, think it rocks.  Hope you enjoy.

Finished Cake in a 9 x 13 Dish
Cake
Ingredients:
·        3 cups all-purpose flour
·        2 teaspoons baking powder
·        1/4 teaspoon salt
·        1 cup unsalted butter, at room temperature
·        1 3/4 cup granulated sugar
·        4 large eggs
·        2 teaspoons vanilla extract
·        1 1/2 tablespoons lime zest
·        1/4 cup gin
·        1/4 cup milk
·        Juice of 1 lime

Directions:
1.     Preheat oven to 350 degrees F.
2.     Mix flour, baking powder and salt together in a bowl and set aside.
3.     In a Stand Mixer beat butter on medium speed until creamy. Add in sugar and beat on medium-high speed until fluffy, about 5 minutes, scraping down the bowl if needed.
4.     Add in each egg one at a time, beating until fully incorporated before adding the next.
5.     Add in vanilla and lime zest and mix.
6.     With the mixer on low speed, add in half of the dry ingredients. Add in gin, milk and lime juice, mixing until combined and scraping the bowl if necessary. Add remaining flour and beat until just combined.
7.     Pour into a greased 9×13 baking dish, and bake for 35-40 minutes, until top is golden. Test with a toothpick
8.     Remove cake from oven and immediately poke holes all over the top with a fork. Pour gin glaze over the cake and let it absorb. Let cake completely cool completely.
9.     Finish with the frosting when cooled and Garnish with Sugared Limes.

Gin Glaze

Ingredients:
·        1 3/4 cups powdered sugar
·        3 tablespoons gin
·        Juice of 1 lime

Directions:
1.     Mix ingredients together until a glaze forms, then pour over the cake immediately while it is still warm.

Gin Frosting
A Slice with Sugared Lime

Ingredients:

     ·        2 1/2 cups powdered sugar
·        2-3 Tablespoons gin
·        1/4 Teaspoon of vanilla extract

Directions:
1.     Mix ingredients together until very thick but spreadable frosting forms. Once cake has completely cooled, spread a thin layer of icing all over the cake. 

Sugared Limes

Ingredients:
·        2 or 3 limes
·        1 cup sugar
·        2 tablespoons sugar
·        1 Cup water
            Directions:

1.     Slice limes into thin rounds; blanch in a pot of boiling water for 2 min & drain.
2.     In the same pot, combine 1 cup of water & 1 cup sugar. Bring to a simmer & add lime slices. Simmer for 15-20 min.
3.     Drain & spread out on a cooling rack to dry for at least 1 hour.
4.     Put 2 tablespoons of Sugar on a shallow plate. When the limes are dry, dredge in the sugar.
5.     Store in an airtight container between layers of waxed paper until ready to use, or freeze.
